Moong dal sambar for Idli/Dosai

Ingredients:
·         1 cup moong dal
·         8 small onions/1 big onion chopped
·         1 medium sized Tomato diced
·         2 Green chillies cut in lengthwise
·         2 red chillies
·         ½ tsp Turmeric powder
·         ½ tsp Mustard  seeds
·         ½ tsp Urad dal/Blackgram
·         ¼ tsp Asafoetida
·         Few curry leaves
·         Small bunch of Coriander (cilantro)
·         2 tbs Oil
·         Salt to taste
Preparation:
·    Wash and clean the dal.
·    Take a thick bottomed cooking pot, heat 1 tsp of oil and add the onions, garlic, green chillies and sauté it for few minutes.
·    Add the dal and 2-3 cups of water, turmeric powder, asafeotida and cook until the dal is soft and done.
·    We can also cook the dal in a pressure cooker.
·    Add salt to taste.
·    In a separate skillet, heat the oil, add mustard as it pops add the urad dal, red chillies and curry leaves, fry it for a minute.
·    Then transfer it to the cooked dal and mix it well.
·    Garnish with coriander.
