Chicken Briyani

Ingredients:
·         1 lbs Boneless skinless chicken
·         3 cups Basmati rice
·         1 medium sized Onion finely cut in lengthwise
·         3 Green chillies cut in lengthwise
·         1 tsp Red chilli powder
·         2 tsp Coriander powder
·         ½ tsp Turmeric powder
·         2 tsp Ginger garlic paste
·         Little Mint leaves
·         Little Coriander leaves
·         2 Bay leaves
·         1 Cinnamon sticks
·         Salt to taste
·         2 tbs Oil
Preparation
·    Wash the chicken and cut into small pieces.
·    Blend tomato, mint, coriander, ginger & garlic paste with required salt into a fine paste.
·    Add the above mixture to the chicken and marinate it for 1 hour.
·    In a wide bottomed pan, take oil let it heat for few seconds then add bay leaves, cinnamon sticks and the marinated chicken mixture and sauté it nicely for few minutes.
·    Add coriander powder, chilli powder, turmeric powder and cook it nicely till the chicken gets soft.
·    In a rice cooker, take the washed basmati rice, the cooked chicken mixture, pinch of food colour, lemon juice, salt with 6 cups of water and let it cook for 10 minutes.
·    In a separate pan, take little oil, fry the onion and green chillies.
·    Garnish the chicken briyani with the fried onion & green chillies, coriander and fried cashews (optional).
·    Tasty chicken biryani is ready and serve with raita.
