Brinjal (Eggplant) Rice

 

Ingredients

2 cup cooked rice (left over)
4 Medium sized Brinjal chopped
1 Medium sized Onion sliced
1 Tomato Chopped
10 Garlic cloves finely chopped
2 tsp Chilli powder
1 tsp Garam Masala powder
½ tsp Mustard seeds
½ tsp Urad dal
Few curry leaves
1 Bay Leaf
2 Cloves
1 tsp Fennel seeds
Salt to taste
1 tbs Oil

Preparation
In a shallow pan, heat the oil, add mustard, urad dal, bay leaf, clove, fennel, curry leaves, onion, tomato, garlic one by one and sauté it for few minutes.
Add the Brinjal, chilli powder, garam masala, salt and sauté it finely until the brinjal cooked well.
Now reduce the flame and add the rice to the brinjal mix and give a fine stir until the rice gets uniform coating of the mix.
Check for the salt.
Garnish with coriander leaves (optional).
Quick and easy Brinjal rice is ready.
