Ingredients
2 cup cooked rice (left over)
1 Medium sized Onion sliced
2 Green chillies cut in lengthwise
1 tsp Ginger Garlic Paste
1 cup Vegetable mix (cut carrot/beans/peas)
Few curry leaves
Salt to taste
1 tbs Oil
Preparation
In a shallow pan, heat the oil, add curry leaves, onion,
green chillies, ginger garlic paste and sauté it for few minutes until the
onion turns light brown.
Add the vegetable mix, salt and sauté it finely until the
vegetables cooked well.
Now reduce the flame and add the rice to the vegetable mix
and give a fine stir until the rice gets uniform coating of the mix.
Check for the salt.
Garnish with coriander leaves (optional).
Quick and easy fried rice is ready.
