Shrimp Fry

Ingredients:
·         1 lbs Shrimp
·         1 large Onion chopped
·         2 medium sized Tomatoes diced
·         2 Green Chillies cut in lengthwise
·         1 tbs Ginger garlic paste
·         ¼ tsp. Turmeric Powder
·         1 tbs Chilli powder
·         1 tbs Coriander powder
·         1 Bay leaf
·         1 Cinnamon stick
·         Few curry leaves
·         Few coriander leaves finely chopped
·         Salt to taste
·         1 tbs Oil
Preparation:
·       Clean and wash the Shrimp.
·       Add little turmeric on the Shrimp and mix it well so it takes the raw smell.
·       In a pan, heat the oil, add the bay leaf, cinnamon, curry leaves and sauté for few minutes.
·       Add the onions, green chillies and sauté till onion turns light brown then add ginger garlic paste, tomatoes and sauté it for few minutes.
·       Add the shrimp, turmeric powder, chilli powder, coriander powder, salt and sauté it nicely and cover the pan and cook for 10 minutes.
·       When the shrimp is cooked well reduce the heat and remove the lid from the pan.
·       Give a constant stir and leave it till the shrimp gravy thickens and dries well.
·       When the Shrimp dries well and turns brown turn off the heat.
·       Garnish with coriander.
·       Serve the Shrimp fry with rice.
