Pudhina Chutney (Mint Chutney)



Ingredients:


·         1 cup fresh mint leaves
·         ½ tsp. Tamarind extract
·         2 Red chillies
·         ½ cup Shredded Coconut
·         ½ tsp. Mustard seeds
·         ½ tsp. Urad dal
·         Salt to taste
·         1 tsp. Oil

Preparation:
·    Take a skillet in reduced heat, add the mint leaves and sauté it for few minutes.(Mint leaves will shrink and change colour).
·    Now in a blender take the sautéed mint leaves, tamarind, red chillies, tamarind, coconut, salt and ½ cup water and blend into a fine paste.
·    Transfer the contents into a bowl.
·    In a separate skillet, heat the oil and add mustard as it pops now add the urad dal fry it for a minute and transfer it to the grinded mixture and mix it well.
·    Mint chutney is ready to serve with Idli/Dosai/Samosa.
