Masala Egg Scramble


Ingredients:
·         2 Eggs
·         2 tsp Coriander seeds
·         2 tsp Cumin seeds
·         2 tsp Fennel seeds
·         2 tsp Black Pepper
·         1 tsp Turmeric powder
·         Salt to taste
·         1 tbs Oil

Preparation:
Making Powder mix:
·        Roast coriander seeds, cumin seeds, fennel seeds and black pepper in reduced heat and grind them to fine powder.
·        Mix the turmeric powder and salt to the grinded powder.
(We can also prepare the powder mix in excess and store it in an airtight container for later use).

Making Masala Egg Scramble:
·        In a pan, heat the oil, add mustard seeds, add the raw eggs, 2 tsp. of masala powder and constantly stir the eggs until it forms small and soft curls.
·        Leave it in reduced heat for few more minutes and when the eggs are cooked well remove from the skillet.
·        The masala scrambled egg is ready to eat.
