Vegetable Cutlet & Sweet Tomato Sauce


  
Vegetable Cutlet
Ingredients:
·         2 big sized Potatoes (boiled and mashed)
·         ½ cup finely chopped beans
·         ½ cup finely chopped carrots
·         ¼ tsp Turmeric powder
·         1 tsp Garam masala
·         1 Egg
·         Salt to taste
·         2 cups of Bread crumbs or crackers/biscuit powder
·         Oil
Preparation:
·       In a pan, heat oil, add beans, carrot and sauté finely for few minutes.
·       Add the mashed potatoes, turmeric, garam masala, salt and sauté it, reduce the heat and leave it in stove for 5 -10 minutes till the raw smell is gone.
·       Check for the salt.
·       Turn off the heat and let it stand to cool well.
·       After the vegetable mixture cools, divide it into small portions and roll it to make a medium sized ball.
·       In separate bowls, take the egg white alone (no egg yolk), bread crumbs respectively.
·       Now take a vegetable ball, slightly press to make it flat & circular shape, dip it in egg white and place it in the bread crumbs and give a uniform coating on both sides and keep it separately, repeat the same for the remaining vegetable mixture.
·       In a flat skillet, take oil for shallow frying and heat it, add the bread coated vegetable mixture and fry until it turns brown and crisp on both sides.
·       Place it in a paper towel to drain the excess oil.
·       Vegetable Cutlet is ready.

Sweet Tomato Sauce
Ingredients:
·         2 Tomatoes
·         ½ cup Sugar
·         Pinch of Salt
Preparation:
·       Immerse the tomatoes in hot water for 5 minutes doing this the skin separates from the tomatoes, remove the skin completely.
·       Now take the tomatoes, sugar, 1 cup of water in a blender and blend it into a fine juice.
·       In a pan, take the tomato juice, pinch of salt and let it boil in reduced heat for 5-10 minutes, when the juice thickens turn off the heat and let it cool.
·       Sweet tomato sauce is ready to serve with Vegetable cutlet.
