Lemon rice

Ingredients:
·         2 cups of cooked rice or left over rice.
·         ½ cup Lemon juice
·         4 Red chillies
·         ½ tsp Turmeric powder
·         ½ tsp Mustard seeds
·         ½ tsp Urad dal
·         1 tbs Channa dal (soaked in water for few minutes)
·         Asafoetida little
·         Few Curry leaves
·         Salt to taste
·         Oil
Preparation:
·    In a bowl take the rice, add little oil, lemon juice and mix it well (rice should be cooled well before adding lemon juice)
·    In a separate pan, heat 1 tbs oil, add mustard seeds, urad dal, curry leaves, channa dal, asafoetida and fry it for few minutes.
·    Add ½ cup of water, turmeric powder, salt and boil it for few minutes.
·    As the water dries and oil separates remove it from the stove and add the mixture to the rice and mix it well.
·    Check for the salt.
·    Lemon rice is ready and serve with pickle/potato fry.
