Ingredients:
· 2 cups of cooked rice or left over rice.
· 2 cup thick Tamarind juice (4 tbs tamarind extract dissolved in 2 cup of warm water)
· 4 Red chillies
· 5 Garlic gloves
· ½ tsp Turmeric powder
· ½ tsp Mustard seeds
· ½ tsp Urad dal
· 2 tbs Channa dal (soaked in water for few minutes)
· 2 tbs Peanut
· 1 tbs Fenugreek powder (roast fenugreek and powder it)
· Asafoetida little
· Few Curry leaves
· Salt to taste
· 1 tbs Oil
Preparation:
Making the Puliotharai mix (Tamarind mixture):
· In a pan, heat the oil, add mustard, urad dal, channa dal, curry leaves, red chillies, garlic, peanut, asafoetida one by one and sauté for few minutes.
· When the urad dal, channa dal, peanut changes to light brown colour, add the tamarind juice, turmeric, salt and bring it to boil.
· Reduce the heat and leave it in stove for 10 – 15 minutes.
· As the tamarind mixture thickens add the fenugreek powder give a stir and turn off the heat.
· We can prepare this mix in advance and refrigerate it for later use.
Making Puliotharai / Tamarind rice:
· In a bowl take the rice, add 2 tbs of the prepared Puliotharai mix and mix it well.
· Check for the salt.
· Puliotharai/Tamarind rice is ready and serve with pickle/potato fry.
