Masala Egg Omelette

Ingredients:
·         2 Eggs
·         2 tsp Coriander seeds
·         2 tsp Cumin seeds
·         2 tsp Fennel seeds
·         2 tsp Black Pepper
·         1 tsp Turmeric powder
·         1 tbs Water
·         Salt to taste
·         Oil

Preparation:
Making Powder mix:
·       Roast coriander seeds, cumin seeds, fennel seeds and black pepper in reduced heat and grind them to fine powder.
·       Mix the turmeric powder and salt to the grinded powder.
(We can also prepare the powder mix in excess and store it in an airtight container for later use).

Making Masala Omelette:
·       In a bowl, take the eggs, water and beat it.
·       In a separate non stick skillet, apply little oil and pour a ladle of the egg mixture and gently press the ladle and swirl it in circles.
·       Cook it in medium heat, sprinkle the masala powder on the wet uncooked side of the egg and when the sides become light brown and crisp flip the other side and cook it for few minutes so the egg along with masala powder cooks well.
·       Now remove from the skillet and the masala omelet is ready to eat.
