Ingredients:
· 1 lbs Shrimp
· 1 large Onion chopped
· 2 medium sized Tomatoes diced
· 2 Green Chillies cut in lengthwise
· 1 tbs Ginger garlic paste
· ½ cup Tamarind Juice
· ½ cup Coconut milk
· 1 tbs Chilli powder
· 1 tbs Coriander powder
· 1 Bay leaf
· 1 Cinnamon stick
· 1 tsp Fennel seeds
· Few curry leaves
· Few coriander leaves finely chopped
· Salt to taste
· 1 tbs Oil
Preparation:
· Clean and wash the Shrimp.
· Add little turmeric on the Shrimp and mix it well so it takes the raw smell.
· In a pot, heat the oil, add the bay leaf, cinnamon, fennel, and curry leaves and sauté for few minutes.
· Add the onions, green chillies and sauté till it turns light brown then add ginger garlic paste, tomatoes and sauté it for few minutes.
· Add the tamarind juice, chilli powder, coriander powder, shrimp and sauté it nicely and cook it nicely for 10 -15 minutes till the shrimp is cooked well and it should be soft(do not overcook the shrimp otherwise it will become very hard).
· Add the coconut, reduce the heat and as the gravy gets thick turn of the heat.
· Garnish with coriander.
· Serve it with rice.
