Curd rice (Yogurt rice)

Ingredients:
·         2 cups of cooked rice or left over rice (over cooked)
·         1 cup Curd/ Yogurt
·         1 small sized Onion finely chopped
·         1 small Green chilli finely chopped
·         ½ tsp Mustard seeds
·         ½ tsp Urad dal
·         Few Curry leaves
·         ½ cup grated Carrot
·         Few Coriander leaves finely chopped
·         Salt to taste
·         1 tsp Oil
Preparation:
·    In a bowl take the rice, yogurt, salt,1/2 cup of water and mix it well (rice should be cooled well before adding curd/yogurt)
·    In a separate pan, heat 1 tsp oil, add mustard seeds, urad dal, curry leaves, onion, green chillies one by one and fry it for few minutes.
·    Add the above seasoning to the rice and mix it well.
·    Check for the salt.
·    Garnish with carrot and coriander.
·    Curd/yogurt rice is ready and serve with pickle/potato fry.
