Crispy Bitter gourd Fry (Pavakkai varuval)


Ingredients:
·         4 medium sized Bitter gourd
·         2 tbs chilli powder
·         1 tbs rice flour
·         1 tbs corn flour
·         Salt to taste
·         2 tbs oil

Preparation:
·       Chop the bitter gourd into fine slices, boil it in water for few minutes and drain it doing this will reduce the bitterness.
·       In a bowl, take the bitter gourd, add chilli powder, rice flour, corn flour, salt and mix well so that the bitter gourd  get  even coating.
·       In a flat shallow pan, heat the oil, add the bitter gourd and reduce the heat.
·       Give a stir in between and when the bitter gourd turns brown and crispy, turn off the heat.
·       Serve it with Sambar & Rice/Rasam & Rice.
